LSME - Vino Dilectio, Emeline

New year often rhymes with new discoveries. What if 2026 was the year you finally explored the wine treasures of Burgundy? Between powerful red wines and elegant whites, the region is full of gems to taste without moderation. At Vino Dilectio, we have selected 5 Burgundy wines that you absolutely must discover to kick off the year. Whether you are a knowledgeable enthusiast or just a curious beginner, these bottles will surely captivate you. And to go further, why not participate in one of our tasting workshops in Dijon? A friendly experience to learn how to appreciate every aroma, every terroir.

1. Gevrey-Chambertin: the king of red wines from Burgundy

Why choose it? Gevrey-Chambertin is one of the most prestigious grand crus of Burgundy. Made from the Pinot Noir grape, it captivates with its aromas of red fruits, spices, and underbrush. Perfect for pairing with game or a platter of aged cheeses.

Our tasting advice: Serve between 57 and 61°F, after a slight aeration. Ideal for a dinner with friends or a romantic moment.

Where to taste it? Find it at our tasting workshop.

2. Chablis Premier Cru: the mineral elegance of Burgundy whites

Why choose it? This white wine made from Chardonnay is renowned for its minerality and freshness. Perfect for lovers of dry wines, it pairs wonderfully with oysters or a fillet of fish.

Did you know? The vineyards of Chablis benefit from a unique soil, rich in marine fossils, which gives the wine its distinctive briny touch.

3. Pommard: power and structure for lovers of full-bodied reds

Why choose it? Pommard is a powerful and tannic red wine, perfect for saucy dishes or red meats. Its notes of black cherry and licorice make it a must-have.

Tip: Store it for 5 to 10 years in a cellar to reveal its full potential.

4. Meursault: Chardonnay in all its splendor

Why choose it? This white wine is smooth and buttery, with aromas of hazelnut and vanilla. A delight with poultry or creamy dishes.

Our favorite: The Meursault "Les Perrières", an exceptional premier cru.

Next tasting: Come taste it at our "Food and Wine Pairing" workshop on January 20.

5. Pernand-Vergelesses, Clos du Bully 2022: my red favorite

Why this wine? This Pinot Noir from Clos du Bully, vintage 2022, is a Burgundy red of great finesse, combining aromas of Morello cherry, violet, and a hint of sweet spices. I had the chance to closely follow the 2025 harvest in this estate, which makes this wine even more special in my eyes.

Why choose it?

  • A unique terroir: the vines of Clos du Bully, located on clay-limestone soils, produce elegant and structured wines.
  • A promising vintage: 2022 produced fruity and balanced reds, perfect for young tasting or aging for 5 years.
  • A versatile wine: ideal with roasted poultry, a beef tenderloin, or a cheese platter.

My advice: Serve between 57 and 61°F, after a slight aeration to reveal its aromas.

This 2026 selection is much more than just a simple list: it is the result of my experience, my favorites, and my passion for Burgundy wines. From Gevrey-Chambertin to Pernand-Vergelesses Clos du Bully 2022 – a red that I witnessed being born during the 2022 harvest – each bottle tells a story and reflects its terroir. To taste them in the best conditions, join me at our workshops in Dijon, where I will share my tips, anecdotes, and favorite food and wine pairings.
